Hello! And Happy belated Father's Day to all the awesome dads out there. It's been a busy little start to the summer and I have been spending more time running around outside than I have at my computer. Here's a little random hodge-podge update on what we have been up to lately. We have definitely been spending a lot of time here:
I love our new patio furniture on our deck. We bought this table from Target.com. Love the free delivery with the RedCard! It feels like we have a whole new living space now, and we eat as many meals as possible outside now. Or even just having my morning latte out here is a treat when the weather is this gorgeous.
An update on the container gardens! They are definitely doing well, I haven't forgotten to water them yet. The herbs are exploding, and I can see flowers budding on the cucumbers and peppers. Tomatoes are still taking there time. We noticed a few holes on some of the leaves - the pepper and tomato plants mostly. Anyone know what that means? Should I be doing something to prevent bugs? Any and all help from people who know about gardening is welcome!
This little girl got a major haircut this weekend. I think she shed about 5 pounds of fur. Since we have had a few 90 degree days now, she was dying with her winter coat. She hates getting a bath, but the end result was worth it we think! She looks like a little puppy again! And for those who have asked, Avery is doing well since getting diagnosed with diabetes. She is 10 years old, and the vet thinks it is just her age catching up to her. We give her a little insulin shot twice a day and make sure she is eating properly. Just have to keep an eye on her glucose levels from now on.
OK back to the food. I have been grilling and doing simple veggies and salad on the side pretty much every night.
I made Nick's favorite dinner for Father's Day - a simple filet mignon, green beans, baked sweet potato and a strawberry-spinach salad. I have probably made this exact meal dozens of times the last few years for all our special celebrations - Valentine's Day, Father's Day, Nick's birthday and sometimes for Christmas. I have perfected my method for preparing a perfect filet after much trial and error over the years. I love a good/delicious tradition!
We headed down to our old neighborhood, the Highlands area of Denver, for the morning of Father's Day. We had no real destination in mind as we started driving, but as soon as Nick mentioned cold-brew, we knew where we needed to go. We headed to a fancy-pants coffee shop that Nick loves, where I felt horribly uncool and immediately wish I had worn something besides green Lululemon shorts ha! Everyone seemed perfectly hip (and child-less) and had a trying but not trying sort of vibe. Which is equal parts intriguing and annoying to me. But the cold-brew coffee was worth the scene. Perfect beverage on a hot 90 degree morning!
Thank goodness Nick was rocking a sweet handlebar mustache, otherwise we might have been asked to leave. Hipsters. And even though no one is looking at the camera in this picture I still love it. This guy is such an amazing dad to Reese. From changing diapers, to kissing boo-boos or singing funny songs and making up crazy games, there is nothing Nick won't do for Reese. He is amazing, supportive and works so hard for our family. We just love him to pieces...ok enough gushing!
I have been looking forward to this week for quite a while now...the best girl's trip ever is about to happen on Thursday in VEGAS! Oh yeah. It's finally happening. Just two more days of work to get through first.
