Happy Friday! What a week it has been around here. I had a big event for work, prepared for two board meetings happening next week, and Nick and I also attended an estate-planning workshop today where we finalized our wills and all that other paperwork. The workshop was at my office and started at noon, which is right at nap time for Reese. Nick wasn't able to get home from his meeting earlier like he had planned, so after waiting for him as long as I could, I scooped Reese into the car and flew down to the office. We rolled in about 15 minutes late anyway (sigh). Reese did pretty well in her first "meeting" lol. During the workshop, she ate a baby food pouch, proceeded to spill yogurt all over my pants, took every baby wipe out of the pack she found in my bag, and flashed the room about 3 times to show everyone her belly. She found my favorite chapstick in my bag and decided it looked pretty tasty and there was no getting it back. Nothing like contemplating your mortality looking at your will while also wondering if your chapstick can be salvaged from toddler drool. But no epic meltdowns or crying. Pretty good if you ask me!
So by the time we returned home the nap time ship had sailed so I aimed to just survive the rest of the day. Even though I was beyond tired, I pulled it together to make dinner - spicy turkey burgers with avocado wrapped in lettuce, steamed broccoli and baked sweet potato. Definitely hit the spot. This week has been so weird and I have felt so low on energy that I have not been cooking a ton, so this felt good.
I was craving dessert and made a banana "nice-cream" bowl and topped with some chocolate-chip "cookie-dough" crumbles. I think I originally found this on Oh She Glows, but have been making my own versions for a while. Have you ever tried to make this stuff? Basically you just blend or process frozen banana chunks for a few minutes until they turn into a delicious frozen concoction that looks a lot like frozen yogurt. I am not sure if this is really recipe worthy, but maybe...let me know!
Oh and I am working on a recipe for next week - tacos al pastor - that picture at the very top is a sneak peak! We loved tacos al pastor during our time in Mexico, and I've been trying to recreate them here at home.
